Creamy Tortellini Soup
You guys, I love soup in the cold months. It’s so good with a green salad and a loaf of fresh, crusty french bread. I have some go-to recipes but tonight, I got a little creative and threw together a tortellini soup based off of some ingredients I had on hand with a few others that I picked up at the store today. I am also a big fan of leftover soup for lunch. It’s filling and super easy to reheat. One of my goals during my busy season at work {I work in a tax office}, is to bring my lunch and not eat out cause that gets pricey. Goals people, goals Ready for the easiest soup recipe ever? Your tummy will be so glad that you tried this. Promise!
- 1 pound Italian sausage
- 4 cups low sodium chicken broth
- 1 can evaporated milk
- 1 can diced tomatoes
- 2 small chopped zucchini
- 3 cups spinach
- 1 large package of cheese tortellini
- 1 tsp each, basil and oregano {I used dried}
Brown the sausage, add the chicken broth, herbs and evaporated milk. Let simmer for 15 minutes. Add the zucchini and tomatoes, simmer another 5 minutes, then add the tortellini for another 5 minutes, toss in the spinach, stir to wilt and voila, dinner is served.
The options of add-ins are limitless. Some suggestions? Mushrooms, potatoes, green beans, carrots, and so on.
Top with fresh parmesan cheese and serve with a salad and some yummy bread. Ciabatta is a favorite around here.
