Creamy Tortellini Soup
You guys, I love soup in the cold months. It’s so good with a green salad and a loaf of fresh, crusty french bread. I have some go-to recipes but tonight, I got a little creative and threw together a tortellini soup based off of some ingredients I had on hand with a few others that I picked up at the store today. I am also a big fan of leftover soup for lunch. It’s filling and super easy to reheat. One of my goals during my busy season at work {I work in a tax office}, is to bring my lunch and not eat out cause that gets pricey. Goals people, goals đ Ready for the easiest soup recipe ever? - 1 pound Italian sausage
- 4 cups low sodium chicken broth
- 1 can evaporated milk
- 1 can diced tomatoes
- 2 small chopped zucchini
- 3 cups spinach
- 1 large package of cheese tortellini
- 1 tsp each, basil and oregano {I used dried}
Brown the sausage, add the chicken broth, herbs and evaporated milk. Let simmer for 15 minutes. Add the zucchini and tomatoes, simmer another 5 minutes, then add the tortellini for another 5 minutes, toss in the spinach, stir to wilt and voila, dinner is served.
The options of add-ins are limitless. Some suggestions? Mushrooms, potatoes, green beans, carrots, and so on.
Top with fresh parmesan cheese and serve with a salad and some yummy bread. Â Ciabatta is a favorite around here.
