Chicken Salad Appetizers With Pickled Onions

Hey friends! Appetizers are totally my jam and I also love ‘foofoo’ food as my dad would call it. What is foofoo food? It’s anything fancy. My dad was a pretty basic eater. The Farm to Table concept would have scared him away for sure. Me on the other hand? I love the foofoo. I’m really only a bit picky when it comes to meat, mushrooms, and raisins.

Pickled onions are not a brand new thing but I feel they’ve been showing up more on menus as a sweet little garnish and well, I decided to make my own. For the easy recipe I used head on over to Cookie + Kate. It was super easy and now I will have this lovely little jar on hand in my fridge to add to so many things. Are you scratching your head over the pickled onion thing? You can add them to the following for an extra bit of flavor: tacos, sandwiches, bagels and lox, salads, burgers and avocado toast.  The color also adds a pretty pop for presentation.

Last weekend, I stopped in at my friend Laura’s Mother’s Day event at her barn venue {H3Barn for you locals} and sampled some of Liz Freeland Catering’s amazing appetizers. One that I loved was an easy chicken salad on a crispy cracker with a bit of pickled onion on top. So I did my best to recreate this deliciousness.

What I loved about this was how easy to it came together. The flavors all complimented each other and it is a great appetizer to serve at a Mother’s Day Tea or a baby/bridal shower. Did I mention how easy it was? 😉

CHICKEN SALAD APPETIZER WITH PICKLED ONIONS ON A ROSEMARY CRACKER


  • 1 large can of chicken (found by the tuna) Costco also carried this in bulk
  • approx 1/2 cup mayo or greek yogurt (I used light mayo)
  • 1 stock of diced celery
  • fresh minced parsley – add a little to the chicken mix and reserve some for garnish
  • Mix the above ingredients and season with salt and pepper
  • Grab some crackers, these are my favorites
  • spread a bit of the chicken mixture on the cracker, add a few pieces of pickled onion and garnish with fresh parsley

It’s that easy my friends! Arrange on a pretty platter and you’ve got yourself a great little appetizer that is sure to please a crowd.
