Chocolate Chip Coconut Banana Bread

Hey friends! Do you ever see a recipe on social media and think, “I must make that ASAP”? Well, that happened to me the other day. I have a few favorites that I follow on Instagram that pull me in with their mouth-watering descriptions and gorgeous photos. They make me think, “I need those calories in my life”. Know what I’m saying?

Half-Baked Harvest checks all the foodie boxes for this girl. I have the cookbook {aff link}. This recipe actually came straight from her website. I love an easy recipe and this was as easy as they come. Unless you are using a box but why would you when something is this easy.

I love that this recipe cuts back on the sugar by subbing honey and also introduces a healthy fat with the coconut oil but it doesn’t skimp on the taste AT ALL.

CHOCOLATE CHIP COCONUT BANANA BREAD

  • 4 medium roasted bananas, mashed 
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups whole wheat pastry flour, or all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup semi-sweet or dark chocolate chips
  1. Preheat the oven to 400 degrees F. Grease a 9×5 inch bread pan.
  2. Roast the bananas on a cookie sheet, leave the peels on with a slice down the center, for 10 minutes. Let cool slightly and smash. Set aside. Reduce heat to 350 degrees.
  3. In a large mixing bowl, stir together the roasted bananas, coconut oil, honey, eggs, and vanilla until combined. Add the flour, baking soda, cinnamon, and salt, mix until just combined. Fold in the chocolate chips. 
  4. Pour the batter into the prepared bread pan. Bake for 50-60 minutes, or until center is just set. Remove and let cool before cutting.

Fast forward to the next time I make this delicious bread, I will probably use 1/2 the chocolate chips to make it a little less chocolatey but for some of you, that might be a sin so ignore me if you need all.the.chocolate. Also, roasted bananas are my signature move for all banana bread recipes and I have made many.

I love baking and cooking but mostly I love eating all the carbs. My yoga pants are OK with this move. What’s your weakness in the food group?
