Easy Foil Packet Dinners
Hey friends! It’s officially S U M M E R and that means it’s time to grill all the things on the BBQ. I love easy foil packet dinners because they are so versatile. You can add in some protein and round it out with carbs and veggies. Topping it off with some butter or cheese is always a great idea! I’m sitting here this morning working on my weekly meal plan + grocery list and foil packets are definitely making a presence this week.
This week has been cray around here. I am feeling super single right now. It’s OK. I can deal but it’s been kinda weird. My oldest son wants to be with his friends every.single.minute.of.the.day so he’s rarely around. My youngest is definitely seeking more freedom and time with friends. This is a new one for me and although, I know so much of it is age appropriate, it feels kinda strange! Having a quiet house is nice but it can start to feel a bit lonely. It’s making me think of what I can do to nurture ME. My hubby is a firefighter and summers are so unpredictable. He has two extra shifts pop up last week and also worked an extra 6 hours yesterday. Then he was out the door at 2am to cover one of his stations while another crew was sent to one of the recent fires. This is fire season. It’s unpredictable. It can change your plans in a hot second {literally} and you can either be frustrated by it {which changes nothing} or roll with it. I try and roll with it although sometimes it’s a total bummer to cancel plans at the last minute. I feel single during fire season and I miss my partner. I think I am feeling it, even more, this year since the kids are becoming so independent too. So I’m in this reacclimating and finding my new normal kind of headspace. Tis grown up life though 😉
When the temps soar, the last thing you want to think about is adding heat to your house by turning on your oven. That’s when you head outside and heat up the grill. The added bonus of foil packet meals? Less cleanup! So go ahead and preheat the grill, grab some foil and add your ingredients. Then, voila, dinner is served! This little packet of goodness was so flavorful and delish! If you set it up as a create your own station, you can set out premade patties, various spices and all the cut up veggies. Then each person can personalize it to their own tastes.
