Southern Tomato Salad
Hey friends! A few weeks back, I shared a yummy salad on my Instagram Stories. I promised I’d get it uploaded here too. Time went by. Summer is winding down. The next crop of seasonal fruits and veggies are coming soon. My point? Time flies and things change. I wanted you to be able to create this yummy southern tomato salad as a side dish before the star ingredients – tomatoes + peaches – are not in their best season anymore.
We have a garden but it hasn’t produced much this summer. My 15-year-old is a bit territorial over the garden and let’s just say that a) he didn’t want to amend the soil as I suggested and b) he wanted to handle things by himself. So next year? My garden, my rules. Seems fair, right? 😉 I think at 16, he won’t care much. I saw a huge decline in his enthusiasm this season cause he likes to be social which leaves less and less time for things around the home front. Ages and stages, am I right? I tend to stick to summer only gardens. Silly I guess cause there are amazing veggies to be had year round. Let me think on that one …
Honestly, fresh tomatoes are one of my favorite things about summer. I love the vibrant colors and the amazing flavor of summer tomatoes. I love them on a BLT, in a Caprese salad or cherry tomatoes just by themselves with a dash of salt + pepper. An out of season tomato is just plain sad. If you’d like an easy side that packs a flavorful punch, you’ll want to serve this at your next get together. We had it at friends last summer and I have been making it ever since. It’s one of my hubby’s favorite sides.
Southern Tomato Salad as adapted by Cooking Light

Combine tomatoes and 1/8 tsp. salt in a bowl. Let stand 5 minutes. Add peaches, olive oil, mint leaves, vinegar, and 1/8 tsp. kosher salt; toss. Top with pepper and crumbled goat cheese.
