The Easiest Whipped Iced Coffee

Het friends! How’s everyone holding up? I’ve got a whole lotta feelings happening but I am tired of sounding redundant and frustrated because I know most of us are feeling many of the same feels these days. We are frustrated, sad, angry, stressed, anxious, and all of the in-between feelings that exist. Hopefully, we are also letting ourselves feel the good stuff too because as much as this sucks, there is good in our days too, right? ❤️

Lately, when I feel blue – I find a way to distract myself. Sometimes this is in the form of trying out a new recipe like whipped coffee. Sometimes it’s busting out some random dance moves to The Greatest Showman Soundtrack. I like to refer to self dance parties as ‘getting out the wiggles.’ Yes, I just admitted that I love dancing – alone – to movie soundtracks. Please don’t judge me. Ha!

Okay — moving on. If you know me at all, then you know that I pretty much constantly have an iced coffee in hand. My sister and brother-in-law were calling me Nancy Botwin for awhile. Nancy is a character from the oh so morally corrupt show, Weeds. I loved it. I mean, it was awful and full of illegal topics but fun to binge.

  • To be clear, I am not dealing drugs like darling Nancy Botwin but I do have an iced coffee in my hand quite often. It felt important to make that clear 😉

Have I lost you yet? Oh good! So what I am sharing with you today is the latest coffee craze. I’d heard about whipped coffee but it sounded complicated (it’s not) so I avoided making it. Then I looked up the recipe and it’s only 3 ingredients! You whip up some instant coffee, sugar and hot water and voila, you’ve got a fun concoction to add to some cold milk with a bit of ice.

I made some for my hubby the other day and he declared that he’d be making these as an afternoon treat for his firefighter fam. Fact — firefighters like coffee.

INGREDIENTS

  • 2 tablespoons instant coffee (has to be instant, trust me on this one)
  • 2 tablespoons sugar
  • 2 tablespoons hot or boiling water

DIRECTIONS

  • Add ingredients to a small bowl, bust out your hand mixer and mix, mix, mix! If you do use a hand mixer (which is the fastest way. Whipping by hand can be done but it’ll take some time), this comes together pretty fast. If you really want to up your coffee game, this awesome little battery operated whisk does a little frothing in no time flat.
  • Fill a cup with your milk of choice and a few ice cubes. If you want to get extra fancy, you can make coffee iced cubes. Top with a dollop of whipped coffee and give it a stir to combine.

This is so easy to make and feels like such a treat! It’s a great go-to on a hot summer day. I will warn you, the caffeine packs a punch so if you are easily affected by caffeine and might be awake all.night.long, make it a decaf.

TIP: Make extra and serve the next day. I put leftovers in a Mason jar and stuck it in the fridge. This morning, I added milk + ice and gave it a good shake and voila, my morning coffee was ready!
