Easy Shrimp Mesquite Salad
Hey friends! The sun is shining today which is a very nice thing. It is still quite chilly outside but when the sun shines, everything feels lighter. Literally. We had snow last weekend, rain last night, fog this morning and now – SUN! I snuck in a quick walk which is part of my daily routine unless it’s too wet. Now I am back inside, in front of the fire working on all.the.things.
The other day, I decided that it was time to reintroduce myself to some vegetables. Is that an awful statement? Like why aren’t veggies a big part of every day? Well, they aren’t. I am kinda lazy and they aren’t my favorites unless someone else prepares them for me. #lazytown But salads are SO easy. Especially with all of the pre-bagged options these days. Taylor Southwest is my typical go to and it’s so good with some added protein like chicken or shrimp. I also add extra chopped veggies. If you grill your protein and dice things ahead of time, it’s so easy to throw together a quick salad for lunch or dinner any day of the week.
HOW TO MAKE AN AWESOME SALAD
GRAB SOME GREENS
ADD VEGGIES
- bell peppers
- onions
- corn
- tomatoes
- broccoli
- olives
- avocado
- beets
- cucumbers
ADD FRUIT
- mandarin orange slices
- apples
- dried craisins or raisins
ADD PROTEIN
- beans
- nuts
- hard-boiled egg
- bacon
- shrimp
- chicken
A rotisserie chicken is always a quick way to get dinner on the table. Shred it immediately when you get home from the grocery store. Once it’s shredded it’s so easy to grab a handful to throw into a salad, pasta or just as a quick snack. Hard-boiled eggs are another one of my favorites. I’m all about the grab + go protein. For this recipe, I tossed some shrimp in a mesquite seasoning I had on hand and quickly grilled it on the stove. I made extra for the week.
Easy Shrimp Mesquite Salad
- Taylor mesquite salad mix (it comes with dressing, tortilla chips, and pepitas)
- mesquite grilled shrimp
- cherry tomatoes
- diced yellow bell pepper
- diced red onion
- avocado
Toss all ingredients in a bowl and serve!
See, so easy? Plus I feel so good about all of the colors and nutrients happening in this salad. I mean, I seriously feel like a healthy eater when I choose salad over say, a bagel or chips and salsa for lunch (yes that does happen). What’s your favorite salad combo?
