Bourbon Pecan Biscotti
Hey friends! Tis the season for yummy treats. I decided I wanted to try something new this season, BISCOTTI! I was inspired by my favorite local coffee shop to make this yummy coffee dunkin’ treat. I started simple and you guys, it was so easy! How have I not made this before? I’ll be working on more variations to see if I can call myself a biscotti master. I mean, I need to take some new skills away from 2020, right?
Pinterest is my go-to for recipes these days and this one from Bake or Break caught my eye as my hubs is a bourbon fan. I promise you it’s simple and perfect for breakfast. Yes, I did say breakfast #its2020 #therearenorules #givemeallthebakedgoods

- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened

- Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone liner.
- Combine the flour, baking powder, and salt. Set aside.
- Using an electric mixer on medium speed, beat the butter, brown sugar, and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Mix in the bourbon and vanilla.
- Reduce the mixer speed to low. Gradually add the flour mixture, mixing just until combined. Stir in the pecans.
- Transfer the dough to the prepared pan. Shape the dough into a rectangle about 3 & 1/2” wide and 3/4” tall. The dough will be a bit sticky, so dust your fingertips with a bit of flour if necessary to help you shape it.
- Bake for 25 minutes. Remove the pan from the oven and allow to cool for about 10 minutes (or until it’s cool enough to handle).
- Use the parchment paper to transfer the biscotti to a cutting board. Cut the biscotti into 3/4” crosswise slices.
- Line the baking sheet with a fresh sheet of parchment paper or a clean silicone liner. Place the biscotti, cut side down, onto the pan.
- Bake 15-18 minutes, or until browned. Cool on the pan for 10 minutes. Then transfer the cookies to a wire rack to cool completely.
She really gave the best step by step instructions and made this the easiest recipe to follow. I’m all about simple directions.
So tell me, have you made biscotti before? Do you have a share-worthy recipe? I’d love to try any recipes that are worthy of making my mouth water.
I hope that you are finding some joy in this funky holiday season. I know for many, the typical holiday plans have shifted and that’s a lot to process when we are missing our people! If you are feeling the Covid Blues, I am sending you all the virtual hugs. I hope, as we all do, that we can head into 2021 with a renewed sense of hope. I think we are all ready for a refresh and a bit of normalcy to resume. I wish you all a very Merry Christmas.
Biscotti Master? What a cool title! Sounds like a yummy adventure!
