The Best Ever Eggnog Quick Bread
Hey there! With the holiday season upon us, I have already started the baking madness! Eggnog bread is one of my most requested recipes. I make this stuff in batches and it makes an awesome breakfast around here as well as a great treat to share with others. The best thing about it {besides the fact that it’s yummy} is how easy it is to make. I am all for the easy treats. Especially because this time of year is already so extra busy.
So grab some eggnog … and rum. The rest of the ingredients are not as important. I kid. Kinda. Now, pour yourself a cocktail and get to baking.
First up, a really big bowl and mixing spoon. This does not require an electric mixer which is part of the charm of this easy recipe.
EGGNOG BREAD
Ingredients:
- 2 eggs
- 1 cup white sugar
- 1/2 cup butter, melted
- 1 cup eggnog
- 2 teaspoons rum flavored extract or rum
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
Directions:
- Preheat oven to 350 degrees F. Grease bottom only of a 9×5 inch loaf pan, or three 6×3 inch loaf pans.
- Beat eggs in large bowl. Stir in sugar, melted butter, eggnog, rum extract {I always use rum and I don’t measure. Just sayin’}, and vanilla. Combine the flour, baking powder, salt, and nutmeg. Stir into eggnog mixture, just enough to moisten dry ingredients. Pour batter into prepared pan or pans.
- Bake bread in large pan for 45 to 60 minutes, or until a toothpick inserted in the center comes out clean {I check mine at 45 minutes and it seems about perfect}. Bread baked in the smaller pans require 25 to 35 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely.
- Eat for breakfast with coffee.
- Give away to friends and family.
- If it doesn’t immediately find a new home, wrap it up and keep it fresh.
I love this time of year and all of the yummy treats that it brings. My pants, however, do not like it so I recommend sizing up or wearing yoga pants. I like to give good advice every now and again. You are welcome.
