Pumpkin Scones
Hey Friends! I am soaking up these fall days and that has me wanting to bake! I thought I’d attempt making some pumpkin scones. I’ve made scones once before but they were a drop and cook kinda recipe which was a little easier but I have to say, these traditional scones were just as easy and turned out fab! My triangles were on point, know what I’m saying? 😉 Making certain foods intimidate me – like scones, pie crust and cheesecake. Is that strange? I have tackled my cheesecake and scone fear – now on to the pie crust. #imscared
I found this recipe over at Call Me PMC. I copied the recipe exactly with the exception of sprinkling some sugar on top before baking. These were a hit with my hubby but it did suggest more ‘spice’ the next time I make him. Scones aren’t an overly sweet treat so you pack in the flavor with the add-ins and sometimes a glaze kicks it up a notch. They are also delish warmed up with a little butter.

- 2 and 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 2 teaspoon baking powder
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/3 cup cold butter – she recommended grating the cold butter. This worked great!
- 1 egg
- 1 cup pumpkin puree not pumpkin pie filling
- 1/3 cup buttermilk

Prepare a cookie sheet with non-stick spray.

Preheat oven to 400 degrees F

In a large bowl, combine flour, brown sugar, baking powder, pumpkin pie spice, salt and baking soda.

Cut in butter until it has course, pea-sized crumbles.

In another bowl, whisk eggs, pumpkin, and buttermilk.

Add dry ingredients to wet ingredients. Combine until moistened.

Knead 10 to 12 times.

On a floured surface, form dough into a circle. It was super sticky so this was a must.

Cut into 8 wedges.

Place wedges on a cookie sheet.

Bake at 400 degrees 16 to 21 minutes or until lightly browned on the outside. * Mine were done at 12 minutes!

Serve warm with butter.
