Crack Cookies – The Easiest Treat You Can Make This Season
Hey there! So many Christmas’s ago, I stumbled upon this most amazing recipe over at Plain Chicken. The original name is White Chocolate Peanut Butter Crispies. So how did they get the name Crack Cookies? Several years ago, I took them into work and my boss declared that they were so good and addictive, that they were like crack {please don’t be offended – it was all in good fun}. So the name stuck and ever since, that is what we call them. Plus, it’s a lot easier to say than the original name. Sometimes people will ask for the recipe and they will say, “Can I get the recipe for those peanut butter marshmallow thingies?”
I love how easy these are to make. You only have to melt the peanut butter and white chocolate in the microwave! Everything gets mixed together and then I usually use a cookie scooper to make all of my cookies. Just scoop and put them on parchment paper for them to cool off on. Easy peasy.
Crack Cookies
Ingredients:
- 2 cups Rice Krispies cereal
- 2 cups dry roasted peanuts
- 2 cups miniature marshmallows
- 1 cup peanut butter
- 2 pounds white chocolate chips (2 12-oz packages plus 1 1/3 cup)
Directions:
- In a large bowl, combine marshmallows, rice crispies, and peanuts.
- In a separate microwave-safe bowl, melt peanut butter and white chocolate chips. Start at 1 minute on high and then continue at 30-second intervals, stirring in-between until melted. The mixture will be a bit runny.
- Add white chocolate mixture to dry mixture. Stir until thoroughly coated. Using a cookie scooper, create scoops and stick them on a piece or wax or parchment paper.
- Once set, place in an airtight container.
Goodness .. these sound scrumptious. I would LOVE to make this with my three boys x
