Pumpkin Chocolate Chip Cookies
Hello sweet flavors of fall! Confession, I don’t drink the PSL’s. Right? I know. It’s shocking cause I do wear the yoga pants and the Uggs. Sometimes. I also love jeans and Birkenstocks so obviously comfort is my best friend. I might have one honorary PSL a season. Another confession, I don’t drink hot coffee. I have all the cute Rae Dunn mugs but I drink tea and hot cocoa out of them. I am a lover of iced coffee. All day, every day. Every season. Now, with that being said, I do love all other things pumpkin. Pumpkin desserts are so so so good. I might even make a bit of pumpkin spice creamer for my iced coffee. Cause you know, leftover pumpkin cannot be wasted. Those few tablespoons must be used!
To kick off the season I made some delish pumpkin chocolate chip cookies. On Saturday, my 14-year-old got to do a ride along with my husband’s fire department. How cool is that? He has decided that he wants to be a firefighter. A couple of more ride alongs are in the future but I am excited that he has a plan. Fingers crossed that it will have him making good choices and working hard in the years to come. Anyway, I had to pick him up that evening so I decided to take some treats to the crew to thank them for teaching him for the day.
I did a little searching for a good recipe and I found this one, which I modified a bit, over at Two Twenty-One. I did a little taste testing at home and then packed up the rest to deliver to the station. My husband tasted them to make sure that they were OK before I left. He really takes one for the team people.
Pumpkin Chocolate Chip Cookies
Ingredients
- 1/2 c. canola oil
- 1 c. 100% pure pumpkin
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1 tsp. milk
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 c. flour
- 2 c. semisweet chocolate chips
Directions
- Combine oil, pumpkin, sugar, egg, & vanilla.
- In a separate bowl, combine cinnamon, baking powder, baking soda, salt, & flour. Add to pumpkin mixture.
- Add milk.
- Fold in chocolate chips.
- Preheat oven to 350°.
- Allow batter to sit for 15 minutes.
- Using a cookie scoop, place batter on baking sheet.
- Bake for 10-12 minutes.
These cake-like cookies will not disappoint. They are full of flavor and might even be awesome for breakfast. Eat and repeat! Those are the only rules here. Do you love all things pumpkin?
