Snickerdoodle Apple Muffins

Happy fall y’all! Fall is upon us which means that apples and pumpkin recipes are aplenty. I love this time of year for all the reasons that anyone loves fall but food ranks up there in my most favorites. I’ve already made a couple of loaves of this delish pumpkin snickerdoodle bread. It’s the best! Snickerdoodle anything is a favorite around here. There is something about the combo of cinnamon and sugar that adds a fun crunch and sweetness.  I love this snickerdoodle cookie recipe. It’s highly requested by my family and a share-worthy recipe.

I was searching for an easy apple recipe and stumbled upon this apple crumb muffin recipe over at Baker by Nature. I modified it just a bit by sprinkling the tops with cinnamon + sugar instead of the crumb topping and viola, snickerdoodle apple muffins were made.

SNICKERDOODLE APPLE MUFFINS

  • 2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 large eggs, at room temperature
  • 1 cup Full-Fat Greek Yogurt
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped, peeled apples

TOPPING:

  • cinnamon and sugar

INSTRUCTIONS

    1. Preheat oven to 400 degrees (F). Grease a 12 cup muffin tin, or line with paper liners; set aside.
    2. In a large bowl combine the flours, baking powder, cinnamon, sugar, and salt; set aside.
    3. In another bowl, beat the eggs, Greek yogurt, melted butter, and vanilla.
    4. Stir wet mixture into dry ingredients just until moistened. Fold in apple chunks.
    5. Fill prepared muffin tin cups two-thirds full.
    6. Sprinkle generously with cinnamon and sugar

Bake at 400° for 17-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Are you team pumpkin or team apple? I am somewhere in the middle. On Thanksgiving, I have to have a piece of apple AND pumpkin pie. It’s basically a mandatory thing.
